Amaretto custard tarts
From Malmesbury Syrups in Malmesbury, Wiltshire.
Method
1. Rub the butter into the flour and bind with a little milk. Roll the pastry out thinly and line 6 well-buttered tins or dishes, each of a 8cm diameter.
2. Chill for 20 minutes.
3. Bake the pastry blind for 15 minutes at 200°C/gas mark 4.
4. Whisk together the eggs, milk, castor sugar and syrup. Pour into the pastry cases and bake for 15-20 minutes at 180°C/gas mark 4.
5. Decorate with flaked almonds and leave to cool before serving.
