Chef-proprietor Glynn Wellington lifts the lid on the new look Bistro in Fowey

Tiffins in Fowey has been revamped and relaunched as The Bistro. food caught up with Fowey boy and chef-proprietor, Glynn Wellington.

What’s the new approach at The Bistro?

Our ethos is to create great bistro food using local produce in a simplistic modern European way. The Bistro has always had a strong French influence, serving traditional French food with a contemporary British twist, but since we took over last July, we’re now showing our love for French food even more.

What’s your cooking background?

I’m self taught. I left school, trained as a carpenter and did my apprenticeship, worked for four more years then got made redundant. I picked up a job as a waiter at Food For Thought in Fowey, but spent most of my time in the kitchen rather than waiting. At the time the sous chef was leaving, I was asked if I wanted to have a job in the kitchen – they knew of my love for food. I moved up through the ranks and became head chef there after two years.

So you’re from the area?

I was born in Fowey and have lived here all my life. I grew up and went to school with the people who are now my fishmongers, butchers and vegetable suppliers – that’s what I call a community. As well as being one of the most beautiful places to live, I can escape to the beaches, go fishing, take coastal walks. Everything I need is here.

What’s The Bistro’s speciality?

Our twice-baked Cornish cheese soufflé is a take on the classic soufflé suisse from Le Gavroche. We put it on the menu over two years ago and haven’t been able to take it off. What can guests expect? An evening out at The Bistro would consist of informal but attentive service, with great ambiance and French-style food, using quality local produce wherever available. Like a typical French bistro, it’s suitable for all ages.
