Chris Cleghorn has been announced as the new head chef of The Olive Tree at The Queensberry Hotel in Bath.
Chris has previously worked with three Michelin-starred chefs: Heston Blumenthal of the Fat Duck at Bray, Michael Caines of Gidleigh Park and Adam Simmonds of Danesfield House.
He said: “This is a great opportunity for me. The Olive Tree is a beautiful restaurant in an amazing hotel and city. It serves excellent food, everyone knows that; the challenge is to take it to the next level. I know we can and I know we will establish the restaurant as Bath’s finest; I just can’t wait to get started.”
The three AA rosette restaurant also has a new restaurant manager, Joss Roussanne, who has worked at Bovey Castle, The Manor House at Castle Combe and restaurants in Paris.
Laurence Beere, proprietor of The Queensberry Hotel & The Olive Tree Restaurant, said: “Everyone’s worked so hard to get The Olive Tree where it is now. Our next challenge is to push standards and expectations even higher. We think Chris and Joss are tailor-made for that difficult but rewarding work, and we can’t wait to help them realise that goal.”
